Ingredients:

  • 120ml Persian Rose Gin
  • 6 fresh lychees (4 for muddling, 2 for garnish)

  • Cocktail Shaker
  • Muddler
  • Chilled martini glasses

Method:

Add lychees to cocktail shaker and muddle until finely mashed.

Add gin, lime juice and syrup - top with ice.

Enjoy.

A note from Erin:

I’ve been experimenting since the launch of the new Persian Rose Gin. It has been really special hearing all the feedback and I received a few comments about people picking up ‘lychee’ flavours. I love lychees and they certainly remind me of summer in Queensland with the cricket on tv.

This non-traditional take on a martini is just delicious, with no vermouth but the addition of the elderflower tonic will keep any sweet tooth guests happy.

I’ve used fresh lychees for this recipe, but you may use canned ones if fresh lychees aren’t available.
